FDA food-safety rules require cold-held potentially hazardous foods — deli meats, prepared salads, dairy — to stay at 41°F or below at all times. Refrigerated display cases are designed to hold 35–38°F at the coldest shelf, but temperatures vary significantly by shelf height and position relative to the air curtain. Bottom shelves closest to the evaporator run coldest; top shelves near the open front run warmest. DOHMH inspectors probe multiple levels, so the entire display zone must stay within compliance.
The most frequent cause in open-front display cases is a disrupted air curtain — warm store air infiltrates when the curtain is blocked by overstocked product, positioned fans, or a missing night curtain. Iced-over evaporator coils from a failed defrost cycle are the second most common finding. In glass-door reach-in cases, a failing door heater causes condensation and frost that eventually blocks the evaporator. Low refrigerant and dirty condenser coils are also common causes, especially in units that haven't had maintenance in over a year.
Open-air display cases use a vertical air curtain drawn from a return duct at the bottom and discharged at the top to form a thermal barrier between cold product and the store environment. Glass-door reach-in cases rely on the door itself as the barrier, which is far more energy-efficient — open-air cases can use 30–50% more electricity annually for the same display footage. NYC supermarkets and pharmacies increasingly switch to glass-door retrofits to meet energy code requirements and reduce refrigeration load on the building.
Twice-yearly professional service is standard for most commercial display cases — typically in spring before summer ambient temperatures stress the condenser, and in fall before the holiday period. Each service should include condenser coil cleaning, evaporator defrost cycle verification, door gasket and heater inspection, refrigerant pressure check, and air curtain velocity measurement on open-front units. Bakeries and delis with high-humidity products often need quarterly coil cleaning because moisture accelerates frost accumulation on evaporator fins.
No. R-22 production and import was banned in the US as of January 1, 2020, under EPA regulations implementing the Clean Air Act. Existing refrigerated display cases that still contain R-22 can be repaired using reclaimed R-22, but reclaimed stock is expensive and increasingly limited. Retrofitting to a compatible R-22 alternative like R-407C or R-448A is possible on many systems but requires new expansion valves and lubricant flush. Equipment older than 15 years often makes more economic sense to replace entirely than to retrofit.
