Hoshizaki publishes a 24-hour ice-production rating that assumes 90°F ambient and 70°F inlet water; NYC kitchens routinely run hotter. Real-world production is 70-85% of spec under normal conditions. If you are well below that, the issue is fixable — it is almost never a dying compressor on a Hoshizaki.

Hoshizaki parts remain available for 15-20 years after a model goes out of production; the compressor and evaporator coils on older KM cubers are rebuildable; and the engineering on the older C-series and F-series machines is honestly easier to service than the newer microprocessor-controlled units. Replace-or-repair math typically favors repair through year 10-12 on a Hoshizaki.
